Pasta BLT

You don’t need bread to make a delicious bacon, lettuce, and tomato meal that will have the whole family clamoring for more. Try a Pasta BLT for a tasty main dish that is a feast for the eyes as well as being a delight to the palate.

Ingredients

  • 3 ½ chicken broth
  • 2 ½ cups uncooked penne pasta
  • 2 tbsp butter
  • 1 cup fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 lb. package bacon
  • ¼ tsp fresh ground black pepper
  • Optional Toppings
  • Shredded Parmesan cheese, chopped fresh basil leaves, coarse ground sea salt


Instructions

  1. Pour chicken broth into a large saucepan or Dutch oven and heat to a boil. Add penne pasta and fresh ground black pepper. Reduce heat and simmer uncovered, stirring occasionally until most of the broth is absorb, approximately 10-15 minutes.
  2. While the pasta simmers, fry bacon to desired crispness, and break into coarse pieces.
  3. Once the pasta is al dente, stir in the butter until melted. Remove pasta from heat and pour into a large serving bowl. Toss in baby spinach, bacon pieces, and tomato halves. Top with your preference of chopped basil and Parmesan cheese. Salt to taste.
