Jackfruit BBQ Sandwiches

You don’t have to be a vegetarian to gobble down a jackfruit barbeque sandwich. You might even be surprised you’re not eating pulled pork. Here’s a quick and easy recipe if you want it give it a try.

Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, thinly sliced
  • ¼ teaspoon sea salt
  • 1 (20-ounce) can jackfruit, drained
  • ½ cup water
  • 1 18 oz bottle of your favorite BBQ sauce
  • Hamburger buns

Note: You could buy a whole, young jackfruit and cut it yourself, but a whole fruit is way more than you need for this recipe, not to mention being super sticky and hard to handle. Don’t make yourself crazy. Just buy it canned.

Directions

Pour the drained jackfruit into a large bowl. Shred by hand, removing and discarding any hard core piece. Heat the olive oil to a medium heat in a large skillet. Add sliced onion and sea salt. Sautee until caramelized, approximately 10 minutes. Adjust heat to prevent burning. Stir in shredded jackfruit. Cook for 5 minutes. Stir frequently and add water as needed to prevent burning. Stir in BBQ sauce until the jackfruit is well coated. Reduce heat to low. Cover and simmer for 20 minutes.

Serve on hamburger buns.
