Oven Baked Buffalo Wings? Yes, Please!

Love buffalo wings, but trying to be good and avoid deep fried foods? Have we got a recipe for you! How about some oven baked buffalo wings that are seriously crispy – you know, like deep fried buffalo wings? Toss ‘em in a classic buffalo sauce and serve with celery and blue cheese dip. Yum! This recipe takes some time to prepare, but the end result is worth it. Here’s how to do it.

Crispy Baked Wings

Ingredients

  • 4 lb. chicken wings
  • 2 tbsp. baking powder
  • ¾ tsp salt

Instructions

  1. Cut the wings into drumettes and flapper portions. Pat the wings dry with paper towels.
  2. Put one oven shelf in the lower quarter of the oven and one in the top quarter. Preheat the oven to 250F.
  3. Place the wings in a large zip top bag. Add the baking powder and salt, and shake to coat the wings evenly.
  4. Line a sheet pan with foil and place a rack on the pan. Spray the rack with a non-stick cooking oil. Place the wings skin side up on the rack. Bake on the lower shelf for 30 minutes.
  5. Move the pan up to the higher shelf. Increase the oven temp to 425F. Bake for an additional 45 minutes. There is not need to turn the wings over, but if your oven doesn’t bake evenly, you might want to rotate the pan halfway through the process. Once the wings are dark golden brown they are ready to come out of the oven.
  6. Serve plain and crispy, or toss with buffalo sauce and serve with blue cheese dip and celery sticks.

Sauce

Ingredients

  • 4 tbsp. unsalted butter
  • ½ cup of your favorite brand of store-bought hot sauce
  • 2 tbsp. brown sugar
  • ¼ tsp salt

Instructions

  1. Combine ingredients in a sauce pan and whisk together over a low heat. Keep warm or reheat prior to using.

Blue Cheese Dip

Ingredients

  • ½ cup crumbled blue cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 clove garlic, minced
  • 2 tbsp. milk
  • 2 tbsp. lemon juice
  • ½ tsp salt
  • Fresh ground black pepper

Instructions

  1. In a large bowl, mash the blue cheese with sour cream until smooth or chucky, depending on your preference. Add the remaining ingredients and mix to combined. Add milk and stir until the mixture reaches your desired consistency.
  2. Keep refrigerated until ready to serve.
